Voatsiperifery (bourbon pepper) or Madagascar wild pepper
Voatsiperifery is a typical Malagasy spice from eastern Madagascar.
This pepper grows naturally and is harvested within 20 meters of height.
As this pepper is still in wild culture, it is currently endangered.
The voatsiperifery is a sweet pepper, it has a less pungent taste and a very powerful aroma of flowers and citrus.
In cooking, the voatsiperifery is added to enhance and flavor white meats, fish and seafood.
This pepper mixes also with meat carpaccios, pan-fried dishes and fat livers.
