The pink berry “Ravenala” of Madagascar

The pink berry, also called pink pepper is a light spice. This pepper is not the same kind of black and white pepper. The berries grow in clusters and become more and pinker as they mature. The clusters are then harvested, dried and then manually degraded.
There are three grades of pink berry; the first grade, the most common is called H.P.S (High Pick Selected). The third grade can be used to produce essential oil.
In cooking, it is added in final into the preparation of veal, fish, fat livers, stuffing and also in sauces. The pink berry is eaten fresh in beet-based entrees but it is often associated with butter and cheese.
In medicine, it affixes its effect against rheumatic and articular pains. It also fights against respiratory tract infections and intestinal disorders.
